Recipe sniping: the salad course

Mmmmmm, both of the fancy salads look awesome (except for the melon, yuck). I am sooo hungry now and my stomach is growling away. Here's my quick'n'easy alternative.

This is my favourite weekday lunch in the summer (and now beyond - thanks to this awesome programme that delivers fresh local blueberries to my office, I am stocked up with five pounds of frozen berries to get me through the winter).

  • Lettuce of choice
  • Cheese, cubed (feta is best, aged white cheddar also works)
  • Blueberries
  • Cashew nuts
  • Avocado, sliced (I pre-mix all the other ingredients at home, then slice and add the avocado at work, just before eating)
And that's it! I keep a bottle of organic papaya dressing in the fridge at work, and get envious looks from anyone who sees me furtively carrying my treat back to my desk.

  1. Mmm that sounds yummy. And it's only 8:40am. How will I make it until lunch?

  2. That was my problem when reading the other two recipes yesterday - I was starving by 11am!

My salad is in the fridge, but I might need something sooner. That's the thing with going to the gym, it makes me really really hungry!

  3. Yum. Makes my super-high-fibre-bread-with-low-fat-and-low-taste-everything sandwich seem positively boring.

I noticed that the recipe war link is attracting some pretty brutal commments. Yikes!

  6. Thanks for the fucking comment!

I voted for Isis in this round. I prefer seafood to steak but hate melon with a passion - can't stand the stuff, can't even stand to eat food that's been in the same fridge as cut-up melon (unless it's in an airtight container).

My grandma was the same way with cucumber - I once saw her almost throw up after eating some salami that had been cut with a knife that was previously used to cut cucumber. I actually like cucumber, but I know that it's very closely related to melon, so hey, I am genetically predisposed not to vote for watermelon and goat cheese salad.

  7. Thanks for the link! Your salad sounds divine. I really, really, really love avocado. Like, irrationally love it.

  8. Oh, me too. And it's so hard to find good ones around here. When I do get lucky, I buy 5 or 6 at a time. I had one last night (with my delivered sushi - a great combination) and one for lunch today.

  9. Yeah, I wish I'd made it today too. Stupid sandwiches.
